The “Pho Van” story is a simple one……Once upon a time Mama Van loved cooking with a passion,
delighting her family and friends with her traditional Vietnamese dishes, one favorite in particular,
“Pho Bo” – Beef Noodle Soup. Aromas of star anise, cardamom, cinnamon, and beef, to name a few, gave
out the obvious hint that Mama Van was cooking up beef noodle soup. And who would have thought that
one could get such pleasure from tossing fresh bean sprouts, Asian basil leaves, sliced jalapenos,
and squirting the “must have” siracha hot sauce and plum-brown hoison sauce - all so complex, but
oh so complete when swirled and mixed around to indulge. Her dream was to open a Vietnamese restaurant
and serve dishes from her homeland to please eager diners seeking good Vietnamese cooking. With the
collaboration of her husband Khiet, and two sons Son and Lam, they formed “Pho Van” and started their first
restaurant on NE 82nd & Glisan, December 1, 1992. Their philosophy was to “Give customers an excellent
dining experience, offering quality food with friendly and efficient service in a beautiful and clean environment.”
Since then, the original Pho Van changed locations to SE 82nd, had 2 facelifts, and opened 3 additional locations:
NW Pearl District (now called “Silk Vietnamese Restaurant & Bar”), Beaverton Town Square,
and SE Hawthorne. Currently, the “Pho Van” team (Hong and her husband Khiet, Son and his wife Loan, Lam and
his wife Elizabeth, and family member, Vinh Wong) work together to manage their four restaurants and develop their future prospects. Meanwhile,
they enjoy the restaurant business, especially being able to meet wonderful customers and friends from all walks of life.
