Silk has come a long way. Since 2002, Silk, previously named, Pho Van Bistro was created to be an extension of our casual eastside location, Pho Van (phovanrestaurant.com). Pho Van Bistro began as a new concept for us offering Vietnamese cuisine beyond the casual noodle soups and grill fare. Attention to detail was a priority to us. What transpired was an upscale restaurant that expressed our personal style, culture, service, and above all, our interpretation of traditional Vietnamese flavors, all in a friendly and welcoming atmosphere.

In spring of 2007, we made several bold changes. Pho Van Bistro acquired an additional space next door to add a much needed bar and remodeled the dining room. By May 17th , 2007 the two sides were married under a new name "Silk" by Pho Van, Vietnamese Restaurant & Bar. Although there is still a connection with our sister restaurant, "Pho Van", "Silk" now has its own identity, sophisticated and elegant, and doing things our special way. Again, it reflects our changing style both in interior design and menu design, influenced by our travels to Vietnam, but remaining true to our values, traditional and contemporary.
